Prep Notes
- Wash and cut up zucchini
- Wash spinach
- Peel and dice garlic
- Large non-stick frying pan with lid
Ingredients
- 2 Tbsp extra virgin olive oil
- 1 Tbsp garlic powder
- 1Tbsp paprika
- 1 tsp chili powder
- 36 oz. large, peeled and deveined uncooked shrimp
- fresh squeezed juice of one lime and a little extra to squeeze over cooked shrimp
- Sea salt and pepper to taste
Directions
Add extra virgin olive oil to pan. Sauté garlic over medium heat until soft, then add zucchini and spinach. Add salt, pepper, Marjoram, parsley and basil. Stir then put lid on and cook for 20 min or until zucchini is tender. Stir occasionally while cooking. Serve.
